“Two Squid Sushi” — Illustrated by Mame Ikeda
This summer’s must-have isn’t see-through — it’s Shi-Su Tee!
So, we asked Mame Ikeda to paint a seasonal delicacy: squid nigiri made with fresh spear squid.
The squid is finely scored with countless hidden knife cuts, giving it the perfect texture and balance with the rice — the kind of sushi that makes you instinctively reach for it.
Lightly pick it up with your thumb, index, and middle finger, dab it in soy sauce, and pop it into your mouth. Tender yet pleasantly firm, with a rich, sticky sweetness spreading across your tongue. Just imagining it makes the beer go down easy.
